I created these gummies to try to get more gut healing gelatin into my little ones’ diets. Inspired by the cozy flavors of hot chocolate, they are filled with healthy fats and mood boosting cocoa. They make a great snacky bite when you’re craving something sweet. And I love that they are lunchbox friendly and perfect in-between meals for the grown ups too!

How to adapt this recipe
swap the milk and cream for canned coconut milk to make these dairy free
-eliminate the vanilla extract and use a few drops of peppermint for a mint chocolate gummy
-add 1 tsp instant coffee (I like Canyon) for mocha flavor

Description

I created these gummies to try to get more gut healing gelatin into my little ones’ diets. Inspired by the cozy flavors of hot chocolate, they are filled with healthy fats and mood boosting cocoa. They make a great snacky bite when you’re craving something sweet. And I love that they are lunchbox friendly and perfect in-between meals for the grown ups too!

Ingredients

1/2 cup raw milk + 1/2 cup raw cream OR 1 cup canned coconut milk
3 tablespoons gelatin
3 tablespoons cocoa powder
1/4 cup maple syrup
1/2 teaspoon vanilla or a few drops peppermint extract
pinch of flaky salt

Instructions

  1. In a small sauce pan add the milk and cream. Sprinkle the gelatin on top and allow to sit for a few minutes. Turn the heat to medium low and gently heat- mixing to dissolve the gelatin until there are no clumps.
  2. Turn off the heat and whisk in the cocoa powder, syrup, extract and salt. Alternatively transfer the gelatin mixture and the rest of the ingredients into a high speed blender and blend until smooth.
  3. Transfer to silicone molds or a 8X8 inch parchment lined pan. Refrigerate for a few hours.
