These are a riff on my chocolate collagen cookies– with calming reishi and a mix of chopped chocolate (I used HU simple and milk). They are sweetened with maple syrup and have a boost of protein from the collagen.

These are a healthy-ish treat to satisfy a cookie craving. I do prefer them the next day so I love to bake ‘em up before bed!

Reishi Chip Cookies

These are a riff on my chocolate collagen cookies– with calming reishi and a mix of chopped chocolate (I used HU simple and milk). They are sweetened with maple syrup and have a boost of protein from the collagen.


Ingredients

1 cup almond flour
1 cup cassava flour
1 tablespoon reishi powder
3 tablespoon collagen
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup melted butter or ghee
1/3 cup maple syrup
1.5 teaspoons vanilla extract
1 cup chopped chocolate (I used a mix of HU milk and simple)


Instructions

  1. Preheat the oven the 350. Line and baking sheet with parchment.
  2. In a food processor add the almond and cassava flour, collagen, pearl, salt and baking soda. Pulse to combine.
  3. Add the butter or coconut oil, maple syrup, vanilla and egg. Process until mixed- fold in the chocolate.
  4. Scoop the cookie dough onto the baking sheet.
  5. Bake for 20-22 minutes. Allow to cool.
