Use it as a base for shortbread and buttercream. Or, smear it on top of sourdough. I like to freeze a batch to preserve the magic of the season a bit longer.

Nettle Butter
Description
Nettles wild fresh flavor are wonderful in both sweet and savory recipes. This is simple butter infuses the most beautiful color and flavor. Melt the butter over pasta. Use it ass a base for shortbread and buttercream. Or, smear it on top of sourdough. I like to freeze a batch to preserve the magic of the season a bit longer.
Ingredients
1 bunch (about 6 oz) nettles
8 tablespoons (1 stick/113g) unsalted butter, at room temperature, cut into cubes
pinch of flaky salt (optional)
Instructions
1. Prepare the nettles: pick the leaves off the nettles and wash well. Bring a pot of filtered water to boil and add the nettles. Simmer for 3-5 minutes. Drain (save the water for tea!) and plunge into a bowl of ice water. Squeeze the excess liquid and finely chop the nettles.
2. Add to a food processor with the butter and process until smooth.
3. Place nettle butter on a piece of plastic wrap, rolling it to form a tight log. Refrigerate until chilled. Store in the refrigerator or freeze.
