There is nothing fancy about this casserole but it’s quick, easy and very family friendly. Masa Chips are a favorite in my house. They are made with organic corn and grass fed tallow. We usually use them for snacking or topping bowls. Here, the crushed chips are the base for a hearty casserole- filled with beef, beans and corn. If I have kefir créme fraiche on hand it adds a deliciously creamy tangy layer but sour cream is also wonderful. Top with a layer of shredded cheese and bake until it’s all gooey and melty. And top with avocado and more Masa Chips!

Description

There is nothing fancy about this casserole but it’s quick, easy and very family friendly. Masa Chips are a favorite in my house. They are made with organic corn and grass fed tallow. We usually use them for snacking or topping bowls. Here, the crushed chips are the base for a hearty casserole- filled with beef, beans and corn. If I have kefir créme fraiche on hand it adds a deliciously creamy tangy layer but sour cream is also wonderful. Top with a layer of shredded cheese and bake until it’s all gooey and melty. And top with avocado and more Masa Chips!

Ingredients

1 5 oz bag of masa chips, plus more for serving
1 tablespoons avocado oil
1 lb ground beef
1 teaspoon taco seasoning or chili powder
1.5 teaspoon salt
1.5 cups black or pinto beans, cooked
1 cup corn, fresh or frozen*
1.5 cups salsa
1 cup kefir creme fraiche or sour cream
1.5 cups shredded cheddar or jack cheese

Instructions

  1. Preheat the oven to 350.
  2. Heat avocado oil, add ground beef, salt and taco/chili powder, stir and cook until slightly browned. Add in the salsa, beans and corn and cook for about 5 minutes.
  3. In a 9 X13 pan add crushed masa chips. Layer the meat mixture on top. Spread the sour cream or creme fraiche and sprinkle with cheese.
  4. Bake for 15-20 minutes, until hot and melty. Serve with your favorite toppings!

* In the summer I like to use fresh corn. Boil in salted water for 5 minutes and cut off the cob. If fresh corn is not available use frozen.
