I always have a sweet, energy packed pick me up on hand to avoid a mid-afternoon crash. These nutty bites are full of healthy fats from the macadamia and cashews, fiber (dates!) and antioxidants from dark chocolate. The combination of flavors were inspired by my salted chocolate nut butter collaboration with Elizabeth from Elizabeth Eats. I adore her use of macadamia and cashew as a base for nut butters. It is the most buttery and creamy combo. Here they are combined with caramelly dates, shredded coconut, vanilla and enrobed in dark chocolate. They are a huge hit with my kids and a perfect treat to satisfy my sweet tooth.

Ingredients
Makes approx 20 bites
1 cup cashews
1 cup macadamia nuts
1/2 cup unsweetened coconut
12 dates, pitted
1 tablespoon coconut oil
1 teaspoon vanilla
2 tablespoon cashew or almond milk
1/4 teaspoon salt
8 oz dark chocolate
Flaky salt
Instructions
- In food processor add the cashews, macadamia nuts and coconut. Pulse until pebbly. Add the dates, coconut oil, cashew milk, vanilla and salt. Pulse to form a sticky dough- chill for 20-30 minutes.
- Line a baking sheet with parchment. Scoop with a small cookie scoop or (heaping) tablespoon and roll into balls. Return to the fridge and chill for an hour.
- Place the chocolate in a heat safe bowl over a pot of simmering water. Stirring occasionally until the chocolate mixture melts. Using a fork dip the bites into the chocolate and transfer back to the parchment sheet. Sprinkle with flaky salt.
- Store in the fridge.
