Instant pot meatballs are a life saver on busy nights. These lazy meatballs are super flavorful filled with herbs, spices and juicy sun-dried tomatoes. I’m a big fan of cottage cheese for its protein content but feel free to use ricotta. I refer to these as lazy because there is no standing over the stove browning or baking meatballs. Simply saute a little onion and garlic, dump in the marinara sauce and meatballs and pressure cook. Meanwhile cook up some pasta, rice or veggies and dinner is on the table in under 30 minutes.

note: These meatballs are quite loose but as they cook they firm up and hold their shape. You can also add bread crumbs.

Description

Instant pot meatballs are a life saver on busy nights. These lazy meatballs are super flavorful filled with herbs, spices and juicy sun-dried tomatoes. I’m a big fan of cottage cheese for its protein content but feel free to use ricotta. I refer to these as lazy because there is no standing over the stove browning or baking meatballs. Simply saute a little onion and garlic, dump in the marinara sauce and meatballs and pressure cook. Meanwhile cook up some pasta, rice or veggies and dinner is on the table in under 30 minutes.

Ingredients

1 lb grounds chicken or turkey
1/4 cup sun-dried tomatoes in oil, drained and chopped
3 cloves of garlic, divided
1/2 cup cottage cheese or ricotta
1/4 cup parmesan or raw cheddar
1 egg
2 tablespoons chopped basil
1/2 tsp red pepper flakes
1 tsp salt
2 tablespoons olive oil
1/2 onion, diced
1 28 oz jar marinara sauce

Instructions

  1. In a bowl combine the chicken, sun-dried tomatoes, 2 cloves of garlic, cheeses, egg, basil, salt and pepper flakes. Mix gently to combine and form into 12 balls- I like to use a cookie scoop.
  2. Set the instant pot to sauce function and add the olive oil. Add onions and remaining garlic and cook for a few monies until translucent but not brown. Add the sauce and in a single layer add the meat balls. Set the function to pressure cook for 8 minutes.
  3. Quick release or allow to come down naturally which will take about 15 minutes to release.

Notes

These meatballs are quite loose but as they cook they firm up and hold their shape. You can also add bread crumbs.
