My latest obsession… This herby dressing is a fresh spin on ranch- bright with lemon and filled with soft garden herbs. I love a mix of parsley, dill and tarragon. It makes the perfect salad dressing or dip for crispy chicken and crudités.
Notes:
Play around with your favorite soft herbs- I used a mix of parsley, dill and tarragon. Chives would also be wonderful.
I love the clean fresh flavor of this dressing for a more traditional ranch dressing feel free to add 1/2 teaspoon of garlic and onion powder. Buttermilk can also be used in place of yogurt.
Use homemade or store-bought mayo. I love making my own with avocado oil. This is my go-to recipe:
To a mixing bowl, add ½ teaspoon room-temperature water, ¼ teaspoon salt and one egg yolk, stirring well. Slowly whisk in one cup of avocado or olive oil, a few drops at a time. As the mixture begins to thicken, begin adding the oil in a slow, steady stream. After all the oil has been mixed in, taste for salt and add a squeeze of lemon if desired.
Herby Ranch
Ingredients
1–2 cloves of garlic, chopped
zest and juice of 1/2 lemon
1 cup fresh herbs- I used a mix of dill, tarragon and parsley
1/2 cup of mayo (homemade or store bought)
1/2 cup of greek yogurt
1/2 teaspoon of sea salt
1/4 teaspoon of pepper
1 tsp. of Dijon mustard
Instructions
Combine the ingredients in a blender and blend until smooth.
