Description

This salad celebrates springs greens and blooms. Its easy to throw together and super adaptable. I make it a little differently every time depending on what’s in season. I love the combo of peppery greens, floral blossoms and candied walnuts. The nuts are crunchy and sweet- they are seriously delicious and they never last long in my house.

Ingredients

Greens and Flowers with Candied Walnuts

mixed greens
edible flowers such as violets, pansies, nasturtium, calendula, chamomile, chive blossoms
your favorite salad dressing
candied nuts
optional: goat cheese, dried fruit, seeds…

Maple Candied Nuts

1 cup walnuts, almonds or pecans
2 tablespoons maple syrup
2 tablespoons panela, maple or coconut sugar

Instructions

Greens and Flowers with Candied Walnuts

In a large bowl add a few of handfuls of mixed greens. Top with edible flowers, candied nuts and your favorite dressing.

Maple Candied Nuts

preheat the oven to 350. On a parchment lined baking sheet toss the nuts with maple syrup and sugar. Bake for 15-20 minutes tossing every 5 minutes or so. Allow to cool and chop. Store in an airtight container for up to 2 weeks

Notes

You can use honey in place of the maple syrup! The results are delicious but the nuts do get sticky and clump after a few days.
