Grain Free Chocolate Chip Cookies

These grain free cookies are refined sugar-free, gluten free and totally delicious. Chewy and crispy, sweet and salty. Everything a good cookie should be. Lightly sweetened with coconut sugar and high in protein from the cashew butter and eggs. With only a few simple ingredients these cookies are a quick and easy way to satisfy your sweet tooth.


Ingredients

1 cup cashew butter you can use any nut or seed butter of your choice
½ cup coconut sugar
1 egg
1 teaspoon baking soda
½ cup dark chocolate chips or your favorite chocolate, chopped
flaky salt for topping


Instructions

  1. Preheat oven to 350ºF. Line a baking sheet with parchment paper
  2. In a medium bowl, whisk together the cashew butter, coconut sugar, egg, and baking soda. Fold in the chocolate chips. Let the dough rest for about 15 minutes.
  3. Using a small cookie dough scoop or spoon, form tablespoon-sized balls of dough and place onto the prepared baking sheet.
  4. Bake for 8 to 10 minutes or until set. Sprinkle with flaky salt. Let them cool for at least 15 minutes on the baking sheet (they will harden as they cool), then transfer them carefully to a cooling rack. They will be crumbly if you try to move them too early.
