This recipe comes from Mountain Rose Herbs- my favorite source for chaga, elderberries and herbs. Chaga is one of my favorite medicinal mushrooms for immune support. It known to balance energy, reduce inflammation and reduce fatigue.

We have had quite a few rainy days in Santa Barbara this season so I have been loving kitchen projects. My favorite require little hands on work and attention and are left to simmer all day.

This syrup is a real treat to have stocked in the fridge- it’s rich and malty and pairs beautifully with flavors like cinnamon, vanilla and chocolate.

How to use Chaga syrup
• drizzled on to pancakes and waffles
• add to lattes, coffee or smoothies
• as a sweetener to
raw ice cream

Ingredients

Chaga Infused Maple Syrup

Chaga Dream Drink

  • 1 cup milk of choice- I use raw milk
  • 23 tsp chaga syrup
  • 1 tablespoon collagen
  • 1 teaspoon casein
  • 1/2 teaspoon colostrum
  • 1/4 teaspoon pearl powder
  • cinnamon (for sprinkling)

Instructions

Chaga Infused Maple Syrup

  1. Bring water to a boil.
  2. Toss in chaga mushroom.
  3. Bring temperature down to a simmer.
  4. Simmer mushroom for 3-4 hours.
  5. When it looks like you have about 8 ounces of liquid remaining, strain the chaga mushroom from the water.
  6. Keep the liquid, this is your chaga “decoction”.
  7. Add the 8 ounces of chaga decoction and 16 ounces of maple syrup to a pot.
  8. Simmer this liquid and reduce until you have about 16 ounces of total liquid. This will take about 30-60 minutes.
  9. Allow to cool and transfer to a jar.
  10. Store in the refrigerator. Its shelf life is about 1 year.

This is one of my favorite drinks before bed to promote a restful sleep. It also makes a delicious morning latte with a shot of espresso. In the summer months pour over ice!

Chaga Dream Drink

  1. Steam the milk and aadd the a high speed blender with the rest of the ingredients. Blend until combined and sprinkle with cinnamon.
