I could eat pasta every day of the week and never get sick of it. I have quite a few meaty noodle dishes up my sleeve but during these cooler months I struggle to get excited about vegetables. This recipe is inspired by my friend Brittany from @thismomentinthyme. She recently shared a veggie loaded pasta and I made it right away! She uses worcestershire and a blend of dried herbs and spices including cinnamon! It’s soooo good.
This is my version using some of my families favorite ingredients. Buy Ranch ground beef and sausage (with added liver!) is a staple in my kitchen. Its a sneaky way to incorporate more organ meats into your diet and the flavor is mild and delicious. This sauce has all the cozy flavors of a Bolognese with very little effort and tons of veggies.
Notes:
I recently made this with Force of Nature ground chicken blend and it was such a yummy variation. It’s a bit lighter in flavor allowing the spices and veggies to come through.
Variations:
• mix up the meat!
• experiment with ground bison, boar venison, chicken or turkey
• use pork or turkey sausage
• skip the sausage and use all ground meat- we love making this with Force of Nature ground chicken.
Beef Boost and Veggie Pasta
Description
I could eat pasta every day of the week and never get sick of it. I have quite a few meaty noodle dishes up my sleeve but during these cooler months I struggle to get excited about vegetables. This recipe is inspired by my friend Brittany from @thismomentinthyme. She recently shared a veggie loaded pasta and I made it right away! She uses worcestershire and a blend of dried herbs and spices including cinnamon! It’s soooo good.
Ingredients
1 lb ground beef (I use Buy Ranch Beef Boost)
1/2 lb Italian sausage (I used Buy Ranch Beef Boost Italian Sausage)
1–2 tablespoons olive oil
1 tablespoon Italian seasoning
salt and pepper
2 medium carrots, shredded
1 small onion, shredded
3–4 cloves of garlic, minced
1 28 oz jar of marinara sauce
2–3 cups baby spinach
parmesan or raw cheddar
1 lb pasta of choice
fresh basil
Instructions
- Heat the oil and begin browning the meat. Add the carrots, onions, garlic and Italian seasoning. Continue to cook until the meat is cook through and the veggies break down. Add the marinara sauce and spinach. Continue cooking for 30-40 minutes or so until the sauce is thickens and the flavors develop. Stir in about 1/4 cup cheese and handful of chopped basil and cook a few minutes more.
- Prepare the pasta according to direction. I like to cook it one minute shy and then toss with the sauce and pasta water to cook for another minute.
- Serve with red pepper flakes, flaky salt, torn basil and more cheese!
Notes
I recently made this with Force of Nature ground chicken blend and it was such a yummy variation. It’s a bit lighter in flavor allowing the spices and veggies to come through.
