Description

As soon as pears hit the market, these stewed pears are on repeat in my kitchen. Sweet and juicy pears simmer for and hour or so with cinnamon, lemon and a splash of maple. They are so simple and versatile -elevating both sweet and savory dishes. My favorite way to serve them is with bone broth rice + raw cheddar + slow cooked meat (beef and oxtail stew, braised lamb shanks, roast chicken) . It’s also delicious on yogurt, cottage cheese, pancakes and waffles. If pears are not in season apples are also wonderful. 


Ingredients

46 pears, firm but ripe
1/2 tsp cinnamon
1 tsp lemon juice
2-4 tbsp water
splash of maple syrup


Instructions

peel and chop the pears and transfer to a small pot. Add cinnamon, lemon juice. water and maple syrup. Bring up to a simmer and then lower the heat. Cook uncovered for an hour or so. Once it cools transfer to the fridge- it will continue to thicken.


Notes

Use your senses- this is one of those recipes I rarely measure. If my pears are ripe and sweet I skip the maple syrup. If they are not as flavorful I add a bit more sweetness. I also adjust the amount of water depending on how soft they are. 

Feel free to add additional spices- nutmeg, allspice, vanilla bean…
