Ingredients
1/2 cup olive oil
1 lb cherry tomatoes
3-4 cloves of minced garlic
4 sprigs of thyme or a sprig or two of rosemary
pinch of chili flakes
3 cups of white beans
4-6 bone in chicken thighs
Instructions
- Preheat the oven to 400. Line a baking sheet with parchment. Add the chicken, drizzle with 1 tbsp evoo, salt and pepper. Bake for 35-40 minutes
- Heat the olive oil in a dutch oven, add the tomatoes, garlic, thyme and chili flakes. Bring to simmer. Cover the pot and lower the heat, cook for 15-20 minutes until the tomatoes start to break down.
- Add the beans and a pinch of salt and heat uncovered until the beans are heated. Nestle in the chicken and cook a few minutes longer.
