Growing up upstate New York visiting the local orchard was one of my favorite things to do on the weekends. The smell of fresh apples simmering on the stove is so nostalgic for me and I have kept the tradition going in my own home. These baked oats are a wonderful way to use applesauce— They are homey and comforting filled with warm, cozy flavors. You can spice these simply with cinnamon but I really love the sweet and spicy flavor of chai spice- a blend of cinnamon, ginger cardamom, nutmeg, allspice and clove. The recipe I’ve shared makes extra, so store it in a jar and use it for cookies, sweet breads and lattes. I’ve added some collagen for a boost of protein- it is flavorless and won’t affect the texture so you can easily leave it out. For me toppings are half the fun. I like something creamy like a splash of milk or a scoop of yogurt. For texture a mix of crunchy walnut nuts and sweet chewy raisins. And since these oats are not too sweet a drizzle of maple syrup!
Ingredients
Baked Oatmeal with Applesauce and Chai Spice
Adapted from Homespun Seasonal Living
2 cups rolled oats
1/2 teaspoon baking powder
pinch of salt
1.5 teaspoon chai spice*
1 egg
4 tablespoons collagen -optional
1 teaspoon vanilla
1.5 cup milk of choice (I use raw milk)
1 cup unsweetened applesauce
1/3 cup maple syrup
2 tablespoon melted butter or coconut oil
Homemade Chai Spice
Recipe from Olive and Thyme
3 tbsp ground ginger
2 tbsp ground cinnamon
1 tbsp ground allspice
1 tbsp ground cardamon
1 1/2 tsp ground nutmeg
1 1/2 tsp ground cloves
Instructions
Baked Oatmeal with Applesauce and Chai Spice
- Preheat the oven to 350. Lightly spray or grease a 9 inch pie plate or 8 X 8 inch pan.
- In a large bowl combine the oats, baking powder, spices, collagen and salt.
- In a another bowl whisk together the egg, milk, vanilla, applesauce, maple syrup and butter.
- Pour the wet ingredients into the oats and stir to combine and pour into the prepared pan.
- Bake for 45-50 minutes, until the center is set and the edges golden brown.
Homemade Chai Spice
- Place all ingredients in a bowl. Mix well to combine. Store in a spice jar or small mason jar.
